Guest Post for Cakespy!



Hi everyone! After a few days of hiking in storms at Mount Rainier, I'm back with a guest post for cakespy. I've long been a reader of cakespy, so when Jessie asked me to do a post, I can't even describe how excited this made me. I made lemon poundcake cupcakes with raspberry and blackberry buttercream frosting. Go check it out at cakespy.com, here.

Oh my those look so good! I am planning on doing some berry picking today at my Moms and Now I know what I am going to make! One of my daughters is 12 and she is a baker too. She makes the tasyiest prettiest cakes! I think it is great that a young lady like your self is so into cooking!

Wow, I love your blog! YOur cupcakes look so delicious I'm almost licking the screen.

One comment though, I dont know if its just me, but I find it really difficult to read a blog that is all captials. You have amazing style and I love the way you set the blog out but maybe the body of the text might be easier to read in lower case. Hope you dont mind me commenting!

I saw these and ran to the grocery store because I simply had to make them right away.

The best lemon cake I've ever had, hands down. Perfect lemon flavor to cake ratio. :)

I must ask... when it came to piping the frosting, what size tip did you use? I used a 1M, and found that the seeds/berry pulp was jamming (no pun intended) in the tip... I wasn't sure if you used a larger tip, or if you may have strained some of the seeds...

Great recipe! It's going in my baking book!

Woo hoo! I'm so glad you tried this recipe and loved it as much as I do. The tip I used is #845, a largish closed star tip. Using a very small tip would definitely jam up with seeds. I usually strain out the seeds, but didn't with this recipe for some reason. I liked the chunks of berries in the frosting.

I don't have it on a setting, but it is at ISO 200, f 1.8, shutter speed 1/50, manual.
I hope you love the lemon cake.

Amazing recipe! The lemon poundcake was perfect! Not OVER lemony. PERFECT! The buttercreams got mixed reviews, they were beautiful, but I think would have been better with less butter. :) Wonderful recipe!

I made these last night for bookclub. They were delicious. I underestimated how long it would take with the two different frostings so allow yourself extra time for this. As suggested by some of the comments I strained the sauces before combining them with the buttercream frosting. I also reduced the amount of butter and only used 2 sticks, but then I didnt have enough frosting for all the cupcakes. I got 26 cupcakes out of this recipe. The cake part is very lemony and moist, the frosting was a bit tart but still very good, not an overly sweet cupcake and perfect for a girly event.
